I live in the US. Looking to purchase a canister of nitrogen. Can someone please tell me:

A. How big of a canister is needed?
B. What other bits of machinery is needed - valve, etc?
C. What are some reasons you might tell the store why you're buying it? Tires? Plasma art?
D. Assume I have an exit bag. How much do I let in to get the job done? I assume there is a dial with numbers in it.
E. Anything else I am missing or need to know?

I purchased my 40cf nitrogen gas tank from a local welding supply store with the intent of replacing the oxygen with nitrogen in 5 gallon buckets of dry food to be stored for awhile. Nitrogen keeps the food fresher. No problem with that intention.
