From a chemical POV SN can only degrade to Nitrate in the presence of Oxygen.

Without doing tests it's probably impossible to say how long it takes to turn fully into nitrate especially if it's vacuum sealed there's hardly any oxygen in side the bag that could react with it over a long period of time.

SN can heavily react when it is hot (molten) at a few 100°C. It's an oxidizer.

Heat speeds up chemical reactions, but if the other reactants are not present (oxygen), then there is no reaction to occur. Think about lighter fluid (not gasoline), you can throw a lit match into a puddle of it, and nothing will happen. But soak it in a fuel like wood or charcoal, and it will easily ignite and begin reacting.

Basically, the most important thing is that it remains sealed. Heat is a factor, but it's mainly a factor when there is oxygen present. If it is sealed, there is very little oxygen that can react with it, considering how few grams of oxygen are present in a sealed bottle.
