I mean most people cook when the pan is not hot enough, they throw in asparagus or some type of protein and it doesn't even sizzle, and that's just wrong imo. unless you are rendering fat which is quite rare.

cooking on high heat develops better caramelisation and flavour. (Preheating the pan first without anything inside)
