I often read people say it was their "choice," but is it truly a choice when every other option is like mere unfulfilling survival rather than living?..

I get where your coming from. If I im only handed so few options is it really my choice? If I can either just live a miserable life or kill myself, is this really a "choice"?
In all fairness I don't think so, but that's how it has been for some time for a lot of people. Some people get more ""options"" than others. Where I live we have an expression that goes like "turn your liver into your heart", basically means to "make do".
But is there a choice in specific - or any circumstance that makes you consider some action - bugging you rn?
I'd even argue that one needs to do more than just "live". It takes way more than just living even fulfilled lives. People need to thrive in order to feel truly fulfilled, make gains, and continually move forward.
