I bought sodium nitrate instead of sodium nitrite, I guess that's why it was so easy to find, I read carefully a million threads about it, I feel like I can't even do this right, now I have to wait another month that I get another paycheck to try find the right one.

I'm curious what happens if you drink the sodium nitrAte instead of the nitrite?
you could die or just be really sick?

Sodium nitrate really won't do much to you, if anything. Eating lots of it, like anything, will cause adverse effects, but you're just going to be ill, not potentially die.
