I've been doing quite a lot of research using medical research papers. Nitrate becomes nitrite in the body. The process for overdose/death takes longer and effects are only seen 1-6 hrs after. The dosage must be higher.

How much nitrate is toxic to humans?

Acute Toxic Effects Human lethal doses of 4–50 g (equivalent to 67–833 mg kg−1 body weight) have been reported. Toxic doses range from 2 to 5 g (RIVM, 1989, WHO, 2011) of NO3. These values are equivalent to 33–83 and 100–150 mg kg−1 body weight, respectively.


So its not as quick and you run a greater risk of being found but it seems like it should do the job?

But it's also salty, and this higher dose would be impossible to consume and keep in the stomach. Of course one could try to attempt with nitrate (or even with table salt) by taking a kilogram of it and hitting the head with it really hard - but it's not a viable method.

sadly it won't, there was a post here from a long time ago someone took Nitrate assuming it's Nitrite. they didn't die but they experienced really bad symptoms. it sadly won't kill you but it will make you suffer for hours all for nothing.
