Not a good method. Even as you start losing consciousness, your survival instincts will kick in, and you'll rip bag off, or you let go of the bag allowing air in.

I'd say it's because the suffocation would be extreme. If you have the willpower to make it through the suffocation, around 7 mins according to one published study, you would pass out therefore losing your grip on the bag and reintroduce oxygen.
If you secured the bag with tape or other method, it could work, but suffocating, again, is extremely painful. To battle your body and SI while fully awake for 7 mins or more doesn't seem easy.

If it were only so easy there would probably be a lot less of us here. Simply putting a bag on your head causes you to inhale your own carbon dioxide, which triggers a panic response in your brain. It is not an easy method to perform successfully.
