I would suggest that you also pick up a pork roast. Like a cottage roll or hogs leg with bone in.
Then try and make a localized cut aiming for a specific point within the roast. (Please wear safety gloves if you can.)
You'll find out very fast that cutting through skin, fat, tendons etc is actually quite difficult. Especially if you are aiming for a specific artery. That's why surgeons train for years. And butchers too.
You'll also find out if your knife's blade will break off easily (they are designed to snap off in sections).
If you push the blade out far enough to reach your carotid artery, you will also break off the knife much easier.
There is a lot to consider and overall, I really can't recommend it.
Other methods are faster, cheaper, less messy, less painful and won't send you to the ER with a massive slash along your neck that will be visible for the rest of your life.
