It would give you symptoms similar to food poisoning but most likely it wouldn't be lethal. Sodium nitrite changes your hemoglobin into methemoglobin, which doesn't happen with nitrate. And methemoglobin instead of hemoglobin makes the oxygen transport impossible and that's what kills you. Most of other symptoms happen both with nitrate and nitrite.Similar threads
