I just joined the forum because, although I have N, I opened my 3 jars some time ago to test their flavor. I removed the metal protection and it looks like in the pictures. Does my N still work or do I need to get new jars?

N is a pretty stable substance. It has even survived being boiled!
You should be fine but seal them up the best you can
