SN's density is 2.168 g*cm^-3. You have to measure how many ml of water your spoon can fit. Then you can calculate using this formula :

n = 20/(2.168*v)
n - number of spoons
v - capacity of single spoon in ml

How much is 20g of SN from a spoon that could be any size or a glass that could be any size?

If you can't work that out how do you expect anyone else to?

It's like saying I have a bag of flour, how much will a bowl of it weigh, or how many pans will I have to fill to get to 1kg?

and in any case a large spoon roughly a universal size. even if it arrived at 18-17 grams or a little more than 20, I think it would still be lethal.

Sodium nitrate (NaNO3) has three oxygen atoms to each nitrogen. Sodium nitrite (NaNO2) only has two oxygen atoms attached to each nitrogen. Sodium nitrite is lighter than nitrate by one oxygen atom. I found a conversion chart for sodium nitrate available online.

Using a standard measuring tsp/tbsp. Measuring is done with 'un-packed down' substance and the top of the measuring spoon is leveled even by a spatual or tool.

The molecular weight conversion for sodium nitrate (not nitrite) says each teaspoon is equivalent to ~4.6 grams and each tablespoon equals ~13.8 grams. An equivalent of sodium nitrite should weigh slightly less than this though.

molecular mass:
NaNO3 = 84.99g/mol
NaNO2 = 69.00g/mol
