I found out recently that engine starting fluid can contain up to 80% ether, this would seem like a really easy source of ether as an anaesthetic. I assume there's something wrong with that idea since I haven't seen people discuss it (maybe it has other irritating/toxic chemicals in it?) but does anyone know more?

Sometimes referred to as "passing the shirt," the starting fluid is sprayed on a piece of cloth and held up to one's face for inhalation.
thanks for teaching me how to huff inhalants wiki 😄
under the 'abuse' section you might find what youre looking for but not in much detail

you witnessed it yourself on the back label ? i checked starter fluid and it contained propane/butane and carbon dioxide as propellants, products of fractional oil distillation and diethyl ether you looking for as the last component and i tried to huff it from surgical mask before this took place ive sprayed it over surface, it evaporated too fast to feel something and i didnt bothered spraying it straight in the mouth(it left oily residue on the mask n i didnt wanted it to stick in down the windpipe)
i think depending on components of local starter liquid you can get for a high purity substance you need a PVC pipe w/ soldered bottom and just a product of propellant/ether mixture w/out unnecessary additives. spray all contents in the pipe and gaseous propellant evaporates off leaves liquid then you need to transfer this liquid in a cooled mason jar close it and put in the fridge

It depends on the brand/type. I have seen ones advertised as 80% ether which is what I was thinking of, not the cheaper ones with less. I was assuming/hoping it could just all be sprayed onto a cloth but your method is interesting.
