I know that some stuff I've posted will still be out there, but I want to make sure that most of my digital footprint and social activity is gone. How can I ensure this? How is everyone preparing for this?

Change all of your names to something else, deactivate or suspend somethings, remove the accounts, deactivate all backups, remove files, abandon and remove accounts from your phone, leaving no trace of information, and factory reset, remove SIM, uninstall apps, delete some accounts, delete messages, also be very discrete about anything, too, etc

Try to share the least amount of personal information possible, because it adds up over time if someone is looking. I try to only talk about my feelings on here and not my situation because every little detail paints a part of a bigger picture.
