the answer is No, it's not recommended. it would unfortunately oxidize into sodium nitrate (changing from NaNO2 to NaNO3) which is nowhere near as poisonous as sodium nitrite.
"Sodium nitrite is hygroscopic. This means that, when exposed to air, it will absorb water and slowly oxydize into sodium nitrate, silently degrading over time. Oxydization will render a sample of sodium nitrite innefective as a end of life agent. Evidence of deterioration can be difficult to determine by visual inspection."

I imagine that while being in water, this proccess happens more quickly, but PPH doesn't mention that particular situation and I'm not an expert in chemistry, so that's just my guess, but after the container's seal is broken, it will eventually oxidize into sodium nitrate indeed.
