Surely if I really want to die and I put bags over my head gaffer tape them shut and handcuff hands behind back. I won't flop about or make noise I'll just die happily.

This is the method I also had before taking SN, unfortunately when I tried it at the end a bit of air got in and so it failed, I managed to free myself miraculously, many will advise against it because it is a brutal method but in the end I don't see all that much difference compared to SN.

I had used a scarf to close the plastic bag around my neck, that must have been the mistake, something stronger is needed.

You will most definitely flop around and make noise. Everyone has a chance of convulsing when they die as your brain starts firing random nerves when starved of oxygen.

You also will not die happily unless you enjoy panicking. Your body knows you need to take a breath by the amount of CO2 in your blood. The more CO2 buildup the more urgently you feel the need to breathe. Build up enough CO2 in your blood and you start to panic and desperately fight for air. This is what will happen if you put a bag over your head. Even with hands cuffed behind your back, you can get the bag off your head and there is a good chance you will as survival instinct can override your conscious thought.

I know it sounds easy but this is a very unpleasant and not very successful way to go.

Not quickly enough, that's why it's considered "brutal method" and is not recommended.

Sodium nitrite. In very small amounts - food preservative. In larger - anti corrosion agent and quite potent poison.
