I've seen various advice about how much water to SN ratio to have. I'm 5'5 and 55kg, but going with 20g to be on the safe side.

1) Does amount of water really matter? Some say I'd need like 50ml and some say 100. What is the consequence of not using enough water? Vomiting? Or will your body absorb less if you use too much?

2) what temperature of the water? Surely hot/warm will make it dissolve more, but also feel like that's more likely to make me feel sick.

According to the guide, changing the heat can affect how the SN behaves, it's best to stick with room temp water.
