Is there a difference if you use Sodium Nitrate rather than Sodium Nitirite? I have been reasearching and reading various threads on this site and could not find a answer. Help

Yes there is absolutely a difference. You want nitrite, not nitrate.

Sodium nitrAte will not work, you need sodium nitrIte.

Okay I purchased sodium nitrate 6.25. It is the culinary version so it only came in a 1 ounce pack. Is this percentage the purity level? Will I have to get a different type

That won't work. You need it to be like 99% purity and it's very hard to find now. Also stay away from Pro cure Sn, it is unreliable.
