It feels like every time I think of suicide I can't help but think of God alongside it

For context, I wouldn't consider myself very religious, especially in a traditional sense. But I was raised in a religious household and my grandmother, who was very traditional, always discussed it with me. She once told me that it was impossible to be forgiven if you killed yourself. She is now dead, and I don't care about heaven or hell or whatever, but I can't help but think about teachings like those on occasion. Is suicide truly that untouchable?

This is not in accordance with Christian scripture. The United States Catholic Catechism for Adults mentions this. For Christians, there is only one unforgivable sin - denial of the Holy Spirit. Suicide = damnation is a fable spread by those without knowledge of scripture.

For some religion suicide is a taboo or a difficult topic and the issue has been much debated. For the Catholic religion it is a mortal sin, the suicide goes against god who gave him life, but in general recently there has been an opening, they also hold funerals for suicides and bury them in cemeteries as well as saying that "the ways of god are infinite and that man does not know them and cannot understand them" (therefore there is hope for suicides too). Somehow a person who commits suicide has lost hope and entrusts himself to the mercy of God or whoever and hopefully will not be further condemned.
I was born and raised in a Catholic egregore even though I have some openness towards paganism. According to some pagan theories, suicides often arise in families that are already problematic (disability, alcoholism, drugs, violence) and it is not surprising that people commit suicide. Suicides remain souls not in peace for a long time and insist on families often "destroying" the flows of health, money and more and contributing to further failures of families that have already failed entirely. And for this reason some pagans are against suicide to avoid the worsening of the family and presence of souls not in peace.

suicide is a grey area in Christianity, so I think we need not worry.
maybe god will forgive us sinners

I could never believe in a God that could create a world with so much evil. I see life as inherently negative. A pointless struggle. "Better to have never been" - as David Benatar would have put it.
Why is the worst pain a 1000 times worse than the best pleasures are good (so to speak)? Why is everything that is important in life out of your control? There is no God. Never has been. There is only nature - and it is brutal and ruthless - always have been. The only people who don't suffer are non-existing people.
