I see a lot of people telling people not to do certain methods due to them being painful, taking a long time etc.. Why does it matter? If you really want to die you'll do whatever it takes.

It matters because it's extremely difficult for many to overcome the fear of pain associated with dying/CTB. "Getting over" that fear and SI is a unique process to each individual, and what may help some people do this may not work for others. Hence why you see so much discussion about these things.

Heck a lot of people don't actually go through with suicide at all

And if they do, I doubt they've come on a forum talking about it

This really isn't true to be honest, I've wanted to die for so long but I'm extremely afraid of the pain. I wish that it was like this but it just isn't. It takes a lot of strength to actually bring yourself to commit suicide in the first place, I mean It's extremely scary thinking about what happens after death for some people, so the fear of pain on top of that just adds onto your issue.

You're free to ignore those who warn others that certain methods are extremely painful & take a very long time. Do whatever you want to yourself, it's your life/death

I think if the method is painful, it is harder to overcome the survival instinct, making the method harder to do. I think often, the more peaceful the method the more calmer one is likely to feel about doing it. Naturally as humans we generally want to avoid pain.
