A couple of weeks ago, the local grocery store had eggs on sale for $3.50 for five dozen! Usually, they are about $1.25/dozen. I use about a dozen eggs every few weeks but good grief! That is cheap so I bought them, five dozen...

Today, I finally faced the question of what to do with all those eggs. Before that purchase, I already had two dozen, so now there are seven dozen, count 'em, 84 eggs! In my fridge.

Well, you gotta know I am not much of a cook. My idea of cooking is heating up a can of something in the microwave.

I don't know what made me think of this but I decided to make pickled eggs. I have eaten maybe two of these in my lifetime but hey, why not. I found a recipe on the 'net and made 24 pickled eggs and used six for egg salad. While standing at the sink peeling them all, I thought, "This is a southern (USA) poor man's food." Those who know me would think I have finally lost my mind. Maybe so.

Next trip to the store, I'ma gonna git some grits.

The eggs, btw, sit in brine for four days. Will let you know how they turn out.

:pfff: Eggs are cheap protein, they are a good deal. I would have bought them as well.
I would have used a lot for scrambled egg, fried egg, egg omelette, carbonara, also poached eggs in instant ramen or Benedict would be nice too.
Then maybe tea egg. Never made tea egg though.

hope your pickled egg turn out great =)
It's worth trying something new.

That's a lot of eggs! As long as you eat like 2 a day you would easily get through them before they go bad. I hope your pickled eggs turn out well.

Tea egg? Will have to look that one up.

I have done the eggs in ramen, too. And breakfast tacos, yum.

The incredible edible egg, right? I don't much like meats, just never ate eggs this much, lol.

Sure glad they decided the egg cholesterol thing was not true. I take a statin for my cholesterol. Hey! Maybe death by eggs?

I'm confused. Is a tea egg the infuser? Or is it an egg prepared with tea, somehow? I have an infuser and about six different kinds of tea. Must do a search.

Eggs are a great source of protein for me for my lazy meals (I'm a vegetarian)

Do you eat ramen? Sometimes when I can't be arsed cooking anything significant, I just bung a ramen in the pot until it's soft, throw some spices in there and an egg or two. Maybe some frozen peas. Shit is delicious and relatively healthy. I just eat it out of the pot, too, to save on dishes.

My wife used to just hard boil all the leftover eggs in big batches and snack on them throughout the day. That's an option too. Bit of salt or some hot sauce on those bad boys and you're off the races brother.

I was referring to the Chinese/Taiwanese tea egg,
It's quite interesting.
They have recipes on the internet.

Well, that pickled egg recipe is a fail, so far. Maybe it needs to pickle longer? Just tastes like a boiled egg with vinegar sprinkled on it. Meh. Not bad but I expected better or different.

Will eat them anyway. Sigh. Maybe a different recipe? The one I did used balsalmic vinegar. Can one pickle something with alcohol? Maybe a really nice anejo (tequila)?? Hmmmm...pickle myself instead, lol!

I made some picked cucumber slices with lemon juice the other day
Didn't have that wow factor either.

Those Japanese pickled daikon/ginger, they do taste so good though,
Commercial but professionally pickled lol.

Recipe and how much sugar probably.
I'm pretty new to pickling as well.

It was worth a try though, that's for sure.

I thought I would like pickled eggs, because I enjoy eggs in most other ways, but it's sooo not my thing. Glad you found a use for them though~
