I wonder if it would be possible to have my cremated ashes mailed to Scotland and get them scattered on the highlands.
Any UK citizens here? Any ideas how to get it done?

Do I need to get a contract with a funeral company? Or just leave my properties and money to the UK and ask the embassy in my last will to get it done in "exchange" for the heritage?

You could contact a Scottish solicitor to act as your executor and maybe have your ashes sent over for them to scatter. I visited the Scottish Highlands last year. It is a beautiful place and would be a good place to rest.
