These are probably not what you'd enjoy, but maybe a few things that you'd be interested in anyway. Three just at the top of my head of a few of my favorites that, at least, not TOO popular like One Punch Man, Mob Psycho, Attack on Titan, and Steins;Gate (those are great, though, so there's a few more suggestions already if you haven't heard of them).
Comedy: Besides Gintama, there's Nichijou. A series revolving around the daily life of high-school girls in a not so daily life. That's pretty much the gist of it. Still, it's crazy. A lot more than how it sounds. The animation is fantastic, I found it pretty funny overall, and if you pay attention a bit, you'll see character development for most of the major characters as the episodes continue. I wish there was a second season...
Psychological: I actually don't have many of these that are favorites, but there is one I loved that I am currently watching: Kakegurui. What a fun series. It's a gambling series, though much like all the other gambling series, the winning results are very predictable. This series is also in the usual high school setting, and the final epiosde of the first season I thought was very disappointing. Nonetheless, I had so much fun with this and am currently watching the second season of it. A lot of the characters are wild in one way or another (especially with the faces. Love how twisted this anime makes them imo), but also lovable qualities. What I like about this one compared to all the others is, besides how blatantly wild it is, that not only is the main character female and it's mostly females as the major/main characters (neither of which you see in gambling series before), and this is without much fanservice for them aside from the OP/ED and official arts (the manga has more fanservice itself), but most of the characters actually matter since they are either explored even further or have character development as the series progress. The music is also fantastic and the animation and details are usually very good. Apparently it gets flak in the West from "gambling manga/anime experts", saying how unrealistic it is even though the series they compare it to (which is almost always Kaiji or No Game No Life) is not realistic at all either, for being predictable (even though that's a prevalent trait in all gambling series), the main character being rather OP (another prevalent trait), and for the main male character being weaker than the female (lol) since he's not the one winning the matches (or being in most of them in general). MAL is FILLED with this.
Isekei: Something else I'm usually not fond of, but there's one in particular that just kept giving me smiles throughout while also keeping me rather interested: Isekai Shokudou. I cannot tell you how much I loved this. This isn't like one of those isekai anime where the main dude is suddenly warped into a new fantasy world and tries to live in it with the usual girl/s and whatnot following him. This one is more unique and also more simplistic. This is where tons of characters in their own worlds suddenly finding a door to a mysterious restaurant in another world that pretty much serves the perfect foods that they like. The main characters are the chef and the two waitresses that work in that restaurant, the chef being the owner of that restaurant. What I like about this is that despite the three appearing the most, each and every character that visits the restaurant get tons of focus in the episode that they appear in. We learn about those characters, a bit about their respective worlds and the lore within, and we later on see how some of them interact with each other. It keeps bringing me a smile with how warm-hearted the tone is, with all of those characters continuously enjoying the food and describing how much they love it, overall placing them in better spirits during the time or each time, while also keeping me interested due to such exploration of the worlds they came from and the character themselves. The OP is okay, but the ED is what really nailed the feeling of the whole anime in. I seriously wish there was a second season. Plus it's beautiful. Very vibrant in colors. I just love this so much. There are people that find this rather boring, though. Not your action-y or harem Isekai. It's a "feel good" anime, and it succeeds very well in that.
