So this is probably a dumb question. But say I were to stick a gun in my mouth, aim directly at the brainstem, and fire; would it be instant lights out before I could even process anything? Or is it possible that some brain-chunks could still be active for a little bit and perceiving the pain?

Yes. But I highly highly recommend you the mega thread on it. Shows you diagrams and what might not work. Trust me I look over that diagram once a day.

Edit: apologies regarding to the first part of my comment. I stand corrected with the other comments and you're right, We just don't know if the person will feel anything.

Well ik you would feel pain for a split second, depends on weapon or caliber, like if you use a shotgun, no chance of living it would be 100% lights out

Anyone who tells you they know for certain whether it would be instant "lights out" with "no pain" is either mistaken, ignorant, or just plain lying. No one, sans the dying, knows how it feels to die, or what exactly happens right before death, or for how many seconds one may realize what just happened, or is happening. I'm pretty sure that any awareness wouldn't last long, but for how long, I have no idea.................and neither does anyone else.
