I've been taking lexapro for about 2 months and a half, I've noticed some improvement with generally better mood, more energy and a general will to do things. But some days the effect just doesn't kick in, I return to my regular low mood and find it hard to get out of bed and shower. I can go days like this until randomly it just returns.

I don't know why this happens, granted I've been irregular with the time I take my meds (specifically during low periods) since I wake up at different times and I've also drank heavily twice (finally wanted to go partying haha) since starting my treatment.

Is this normal?, should I be concerned?.

Drinking too much seems to mess with the effect of the SSRI's in my experience. It kind of "resets" you to the depression baseline and you need to wait for the med to kick in again.
Maybe you could ask your Pdoc to up your dose?

Alkohol kinda nullifies meds and take you to the base level of depression.
And well you can ask for a higher dosage as it may help you even more.
